Baked Catfish with sauteed potatoes and baby bok choy
Pretty simple, easy-to-make meal! I picked up some baby bok choy yesterday, and sauteed it today with a bit of butter, garlic, a teensy bit of orange marmalade and soy sauce. The potatoes I boiled first, and then I sauteed them with a bit of butter, olive oil, garlic and salt and pepper. The fish was easy to make: Put some dijon mustard, salt and pepper on it, a couple of chunks of butter too, and then pour some bread crumbs over it, and bake it at 500 F for 13 minutes or so.
